Instructions
Banana Bread Bars
Preheat oven to 375.
Flour and grease a 9x13 baking dish.
In a large bowl, beat together sugar, sour cream, eggs, and butter until creamy.
Blend in bananas and vanilla.
Add flour, baking soda, and salt. Mix until completely blended.
Spread into pan and bake for 25 to 28 minutes or until golden brown. (Be careful not to overcook. You don't want to dry them out. They will continue to bake as they rest in the pan.)
Allow to completely cool, even overnight. Frost with peanut butter frosting.

Almond Peanut Butter Frosting
With a handheld or stand mixer fitted with a paddle, beat the butter on medium speed until creamy, about 2 minutes.
Add the peanut butter, confectioners' sugar, heavy cream, vanilla extract and salt with the mixer running on low.
Increase to high speed and beat for 3 full minutes.
Add up to 1/4 cup more confectioners' sugar if frosting is too thin or another Tablespoon of cream if frosting is too thick.
If not using immediately, cover tightly and store for up to 1 week in the refrigerator.
Notes
Quick Tip: You can substitute Half & Half for the Heavy Cream, but I wouldn't recommend substituting margarine for the butter.
